Easy keto oatmeal with chia seeds

Ingredients
• 4 tbsp whole chia seeds
1/4 cup unsweetened shredded coconut
•1/3 cup unsweetened flaked coconut
• 1 tsp unsweetened vanilla extract
•1/2 cup coconut milk or heavy whipping cream
• 1 cup water or unsweetened almond milk, hot or cold
• 2 tbsp powdered erythritol or swerve or other healthy low-carb sweetener from this list – use to taste or
skip
• 5-10 drops stevia extract – use to taste or skip
• Optional: top each bowl with 1/4 cup fresh or frozen berries of choice
Instructions
1. Place the dry ingredients into a small saucepan and mix together.
2. Place the saucepan over medium heat and whisk the ingredients together for about 10 minutes until it
has thickened and is warmed through.
3. Pour into a bowl and top with your favorite toppings – we recommend extra sugar-free maple syrup and
chopped pecans.
