Broccoli Fritters


Overall cooking time: 30 – 40 minutes
Ingredients
• 2 cups riced broccoli
• 2 large eggs
• 1/4 diced onion
• 1/2 cup almond flour
• 1/2 cup shredded cheddar cheese
• 3/4 tsp salt
• 1/4 tsp black pepper
• 3+ t olive oil
• Cheddar cheese, parmesan (optional)
• Optional- sour cream or vegan sour cream
Instructions
Blanch broccoli florets in a pot of boiling water for 2 minutes or just until cooked. Drain well and cut into small
pieces (almost like broccoli rice).
In a large bowl, whisk the eggs. Add the cheddar cheese, parmesan cheese, garlic, flour, spices, and chopped
broccoli to the bowl. Stir until fully combined.
Heat oil in a non-stick pan over medium-high heat. Scoop 1/4 cup of batter and drop into the pan, gently flattening
with a spoon, to about ½ inch thickness.
Cook each fritter for 2 to 3 minutes per side until golden brown. Repeat with remaining batter.
Transfer to kitchen paper and repeat using the rest of the oil and batter.
Serve with sour-cream, greek yogurt, sriracha mayo, or your favorite dipping sauce!
